Bar-B-Q Racoon

 

  

This photo was on the cover of a Hallmark card that I received many years ago. The card came from a well-seasoned chef after he visited our farm, Spur Ridge, for the first time. The hand written note inside was the real gift, it began with “Some people get older, some get wiser, and a few become genuine characters.”  I have kept this card because it awakens thoughts from the past that bring me joy, a few words of gratitude that have lifted my spirits many times over the years.

There were several chefs at the farm that day, all skeptically watching and waiting to see who was going to take the FIRST bite of the main course: Bar-B-Qued racoon. Well, what would you cook for chef’s that had fed Queen Elizabeth and five different US Presidents?

One of my long-time client chefs had speared a portion of the meat and was studying it quizzically when my employee simply leaned over and bit the Bar-B-Que racoon right off of his fork. 

After moments of roaring laughter, they all enjoyed this memorable meal.
